Ty and Noah met at the Local Option in Chicago in 2008. Noah was bartending and Ty was in law school. Homebrewing was an instant connection. As Ty went on to practice law and continued homebrewing, honing in his recipe with dreams of someday opening a brewery, Noah co-founded Local Option, which was a nomadic brewery, making its beer all around the midwest. At a fork in the road, Noah decided to go back into the coffee industry as the production manager at Dark Matter Coffee. He stayed closely tied to brewing and the beer industry. He helped build and run Dark Matter's iced coffee brewery, was involved in the barrel aged coffee program, traveled to Guatemala to engage in coffee fermentation projects and was involved with helping formulate many coffee beers with breweries around the midwest. During this time, Ty and Noah began homebrewing together in each other's garages and realized both still had the dream of opening a brewery.
